Peppercorn and Garlic Pork Tenderloin with Veggies

Incredibly easy crock pot meal.

I've been trying to watch what I eat lately. Sometimes eating healthier can be difficult especially finding the time to cook. That's where the crock pot comes in to save the day.  Throw it all in the crock pot before heading into work and when I get home. Voila.

1 lb Lean Generation Peppercorn & Garlic Pork Tenderloin.
1 lb Private Selection Organic Mini Peeled Carrots.
1 lb Ruby Sensations Red Potatoes.
1 Medium Yellow Onion (chopped)

Place all ingredients in crock pot.  Cover with water.

I included the brand names of the ingredients so that I can give the Nutritional Facts. Different brands are sometimes drastically different. I bought everything at Kroger's, in case you were wondering

Cake Mix Cookies

Mom got this during her Crazy Sorority Days with the Sisters. Those crazy Sisters and their cookie recipe swaps!



  • Cake Mix (Any will do)
  • 2 eggs
  • 1/2 cup oil
Mix all ingredients.  Drop by spoonfuls on cookies sheet. Bake for 10 minutes at 350°.
Cookies will seem underdone, but remove and allow to cool.  Sprinkle with powdered sugar or any flavor of canned icing.

Texas Millionaires

 
Here's a recipe from my aunt for some chocolate candy, similar to Turtles.
  • 1 package milk chocolate chips
  • 3 cups pecan halves
  • 14 oz can Eagle Brand milk
  • 1 teaspoon vanilla
Melt chocolate chips, add milk and vanilla. Mix well. Then add the nuts.
Drop by spoonfuls onto wax paper.

Mom's Great Pumpkin Cookie Recipe

Mom's Great Pumpkin Cookie Recipe
  • 4 cups flour
  • 2 cups quick oats
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 1/2 cup butter or margarine
  • 2 cups brown sugar
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 can 16 oz pumpkin
  • 1 cup chocolate chips

Combine flour, oats, baking soda, cinnamon and salt. Set aside.
Cream butter, sugars, add egg, vanilla, and pumpkin.  Mix well.
Gradually add dry ingredients and continue mixing to incorporate dry ingredients into wet.
Stir in chocolate chips.
Bake at 350ยบ for 14 minutes.

Steve's 15 Bean Crockpot Soup

  • 1 pound bag of 15 bean soup.
  • 1 can of Rotel, diced tomatoes with green chilies
  • 1/2 pound bacon, about 4 or 5 slices of thick bacon
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 tablespoon chili powder
  • juice from one lemon, I use bottled lemon juice. Approx 1/4 cup
  • enough water to cover beans and bacon
  • salt and pepper to taste
Rinse beans and add to crockpot.
Add Rotel, lemon juice, chopped onion, minced garlic, bacon and chili powder.
Add enough water to cover ingredients.
Let this cook overnight 6-8 hours. Longer is better.
The next morning when the beans are cooked, remove the bacon and throw it away.
Add salt and pepper to taste. When cooking beans always wait til the end to add salt.
You can also add the ham "flavor packet" that often comes with the beans at this point, if you want.
I let this cook another hour or so after adding the last of the seasonings.
